Larger ships appear as you level up, you'll most likely have to capture them from another rival nation. Occassionaly might be able to buy one from the ship vendor.

by a ship vendor do u mean the guy at the shipyard?

Yes, of course, but I'm not sure if we can buy all ships in shipyard. For example, I've never met the possibility to buy Man-of-war in the shipyard, just warships [sometimes] and ship of the line [ really seldom ].
Sometimes you can gain one of these ships fighting with enemies. I remember that I met the Spanish Man-of-war and brig once ( really small fleet, isn't it? ). I had got a frigate and one corvette, so I decided to shoot from the cannons and after 15 minutes I gained this ship, but 1/3 my crew died.
