That IS weird. You're not supposed to kill those monks; you should talk to them. They can offer you skill enhancements at the penalty of not being able to save until you talk to another monk.
And they're not supposed to be Maltese Knights either. Apparently the code for the Maltese Knight Abbey in Greenford also takes effect for these monks. The check that triggers the Maltese monk resurrection checks for the monk3 model, and Scheffnow's monks happen to have the same model.
One could set Scheffnow's guys to immortal, as their death could break the no-save mod. OTH I don't know if it is worth the effort. Anyone who kills them should live with some divine punishment.
