Ransoming Prisoners

Without going into the Advanced Options and changing the ransom option, how exactly do you ransom a prisoner sitting in the cargo hold?

The best time to ransom a prisoner is while in port when you first pull in but before you set foot on land. Sometimes it crashes when one tries it at sea.
Then one goes down to the hold and talks to the prisoner. The choices vary, but usually one can ransom the prisoner, hire the prisoner as an officer, or kill the prisoner. The option to simply release the prisoner does not work. Also sometimes the only option is to kill the prisoner.
If one waits too long before doing this the prisoner will escape.
