how to modify ship's statistics?

would it be possible to make a trade galleon as fast as a pinnache?
making a sloop having a wide turning radius
and stuff like that?
i would like to play a bit with a pole brigantine but it s quite SLOW..
is there a way to make it a "fast" ship?
